Members’ Dining Room – Breathing new life into a timeless favourite

A rich part of the Club's history is being refreshed and new life is being breathed into one of the most cherished and iconic heritage spaces at Tattersall's - the Members' Dining Room.

With the opening of The Conservatory, and its contemporary flair, Members' dining offer choices have diversified. Now, the Club has embarked upon elevating its signature heritage dining space.

In its first phase, the newly-reopened space features fresh carpet, uplifting the room’s ambience.

Members can also enjoy a freshly polished menu and experience that heightens the room’s unique old world charm and celebrates the Club's rich history – and there’s more still to come.

Standing in the heart of the city for almost 100 years, the Art Deco Members’ Dining Room is an inimitable piece of Brisbane’s history and one of the most celebrated and exclusive dining experiences in Queensland.

With ten-metre high ceilings and walls adorned in Queensland marble, each aspect of Members’ dining experience has been carefully considered to honour the prestige and grandeur of the surrounds.

The room also gives a nod to the Club’s horse racing legacy with its showcase of statues and trophies.

From experiencing acclaimed culinary craftsmanship, to the exceptional expertise and attention to detail from your hosts, the Members’ Dining Room continues to appreciate as a rare jewel and one of Brisbane’s finest dining experiences.

Designed by the same architects behind Brisbane’s beloved City Hall, architects Hall and Prentice, Tattersall’s Member’s Dining Room is of a rare calibre of craftsmanship in Brisbane.

Built in 1939, the space is ‘quintessentially Tattersall’s’ and one of the most cherished aspects of the Club amongst long-standing and new Members alike.

The room features sprawling windows overlooking Queen Street Mall, diffusing natural light that reflects off the Art Deco style mirror-lined walls.

Also featured are four large oil paintings featuring local artists and subjects, commissioned from Queensland artists William Bustard, Charles H. Lancaster, Mel Haysom and P. Stanhope Hobday.

Measuring 10.5 feet high by six feet wide, the murals are set within the marble and between wall mirrors, each depicting Queensland industry, respectively honouring miners, timber-getters, agriculturalists and pastoralists.

In this beautiful space, Tattersall’s hopes its Members continue to enjoy the experience, cherish special moments with loved ones, and create a lifetime of unforgettable memories.

Welcome to The Conservatory – Now Open

Tattersall's has breathed new life into its Club, opening its doors to The Conservatory - a new contemporary dining precinct promising a tantalising twist on tradition.

Open seven days a week, the Club has already hosted a bevy of Members and their guests in their new space for breakfast, lunch, dinner, and everything in between, to glowing reviews.

The Conservatory seats up to 100 Members and guests, and features its own 26-seat private dining room, The Mixing Room - the perfect space for birthdays, anniversaries, board room lunches, and other special celebrations - making it a true 'venue for all occasions'. 

Complementing the Club's existing Art Deco heritage spaces, The Conservatory is a fresh new premium dining experience for Members to enjoy in the heart of the city.

One of the greatest highlights for Members to enjoy is the gourmet menu curated by Tattersall's acclaimed Executive Chef Warren Turnbull, focusing on shared plates with flavours inspired from around the world.

With a very busy first few weeks, Tattersall's encourages Members to book in early and experience the new space for themselves!

Get to know Tattersall's Health & Wellness Centre Manager, Gareth Hall!

Q. What led you to do the work you do?

I was always extremely active as child; this included such sports as BMX riding, competitive soccer and running my first marathon at 19. At 17, I suffered a serious injury playing soccer and part of my injury rehabilitation journey included working out at the gym – at which point I realised the value and benefit of strength training for everyone. Soon after I had recovered from injury, I switched my college course and started my journey as a fitness trainer and strength coach.

Q. What advice would you give someone who wanted to improve his or her fitness and lifestyle?

Be consistent and create good habits! Changes in fitness, health and wellness take time. It takes a period of regular exercise for physiological adaptations to occur and physical appearance to change. Increasing sleep duration and quality can significantly improve wellness, productivity, and general mood. Do not underestimate the value of incidental movement; hitting 10,000 steps daily can drastically lower the risk of developing metabolic disease and help maintain a healthy weight.

Q. What do you do when you are not working at Tatt’s?

Most mornings I’m up at 4:30am swimming, cycling, or running as I am a keen triathlete. You will often see me compete in races around SE Queensland on the weekends. My other interests are collecting vinyl records (I’m as massive Foo Fighters & Oasis fan) and watching British crime series.

Tattersall’s welcomes acclaimed international Executive Chef Warren Turnbull

Tattersall’s Club is dishing up a new level of epicurean excellence as it welcomes renowned international culinary artist, Executive Chef Warren Turnbull.

With several esteemed Australian Good Food Guide ‘Chef’s Hat’ awards to his name among other accolades, Warren is set to lead the menu not just for Tattersall’s upcoming Conservatory, but the Club as a whole.

The appointment is the latest in a string of enhancements made to Tattersall’s to continually enrich Members’ experiences.

“I’m hoping to bring a real consistency to the style of food throughout the Club – not just the Members’ Dining Room or The Conservatory,” Warren said.

“The food and what we’re offering will follow through to the Members’ Bar and functions.

“So no matter where you are dining in the Club, you will have a sense of enjoyment.”

As well as leading acclaimed Sydney restaurants Banc and Assiette, Warren’s international experience includes cooking for the royal family of Abu Dhabi, and working alongside acclaimed British chef Marco Pierre White in the UK.

 “Coming to Tattersall’s, I fell in love with the Members’ Dining Room.

“As soon as I saw it, I was just blown away and it brought back a lot of memories of my early cooking career with beautiful dining rooms, and I just could not resist. I just had to be part of it.”

He said he is excited to be part of Queensland’s leading private Club, and to put a modern twist on classic dishes – whilst keeping signature favourites.

Warren shared his culinary philosophy, hinting at what Members’ can expect.

“Finding the best produce, and doing very little to it. So let the produce speak for itself.

“Just with a little bit of love, you’ve got an amazing dish. Keep it simple,” he said.

Warren joined the team in January and has already begun infusing his skills into the Club.

His approach for The Conservatory is set to reimagine the dining experiences offered to Members, introducing a more contemporary option to complement the signature Members’ Dining Room – which will be elevated to new heights of traditional dining.

The Conservatory is set to open in May, and bookings will be opening soon.

In the meantime, the Club is ready to welcome you and your guests for breakfast, lunch, or dinner to experience some of Warren’s new menu additions - and gain a taste for what’s to come.

Tattersall’s unveils new contemporary dining precinct ‘The Conservatory’

Brisbane’s heritage-listed Tattersall’s Club will unveil a new contemporary dining experience this May when it launches The Conservatory in its biggest redevelopment in more than two decades.

A tantalising twist on tradition, The Conservatory promises light bites, shared plates and exotic flavours set to the backdrop of a sunlit and spacious new 100-seat dining precinct.

Tattersall’s Club President Michael Paramor AM said The Conservatory would not only expand the cuisine on offer at the Club, it would also create a more fluid and accessible culinary option to suit Members’ lifestyles.

“It will be a less formal destination that will suit Members who want a quality dining experience but may not have time for a long gathering,” Mr Paramor said.

Serving breakfast, lunch, and dinner, The Conservatory can elevate Members’ everyday breakfast meeting, coffee catch-up, lunch, or afternoon drinks enjoyed over shared plates.

Mr Paramor said the name The Conservatory captured the essence of the new experience for Members.

“We chose the name because it’s being built in the space that was a sunlit annex to the 1926 heritage building,” he said.

“This space naturally encapsulates the fresh, light, friendly ambience that characterises The Conservatory.

“This is the largest investment the Club has made in the last 25 years dedicated purely to enhancing Members’ experiences.”

Atop the corner of Queen and Edward Streets, the Level 2 space became The Healy Room in the 1990s and also housed the O’Duffy Library, Member Services and administrative areas which have been relocated within the Club.

The Conservatory also features a 26-seat private dining room that will become an ideal gathering place for large groups including corporate teams that can utilise in-room technology.

Other features include two private telephone booths, new amenities, and a larger state-of-the-art kitchen that will service the entire Club.

“We’ve outgrown the kitchen since the 1990s so we took the opportunity to expand the facilities and give our chefs the space they need to showcase their expanded repertoire,” Mr Paramor said.

Tattersall’s Club also took a considered approach to its design and décor, with The Conservatory being crafted almost exclusively from Queensland and Australian-made materials.

Local fixtures include Australian hand-blown glass light pendants to Blackbutt wooden flooring from regional Queensland – and almost everything in between.

“As Queensland’s leading private Club, it was important to us that almost everything in the room was locally sourced and made to support local industries,” Mr Paramor said.

The President said ‘Members of today and Members of tomorrow’ were looking forward to the new dining experience.

“Our Members’ palates have changed and their dining preferences have changed and we’re changing in line with that,” Mr Paramor said.

Mr Paramor said the Club was listening to Members who, in 2018, voted in favour of a more contemporary dining precinct to complement the Club’s iconic heritage spaces.

The redevelopment also reflects the Club’s recent progressions with a renewed acquisition focus including a major growth spurt in 2021 with younger and more diverse Members joining.

And while a new modern Member experience is on the way, Tattersall’s will simultaneously take its traditions to new heights.

“In tandem with unveiling our contemporary space, we will also elevate the Members’ Dining Room to an exquisite new level of ‘old world’ fine dining, expanding opening hours and breathing new life into what has always been a Member favourite,” Mr Paramor said.

Building began for The Conservatory over Christmas, and the precinct is on track to open in early May 2022. Bookings will open in the near future.

Update to Club Operations

Your Club is ready to welcome you back tomorrow, with some changes in operations to keep both our Members and team safe, and adapt to the community impacts of rising COVID-19 infections.

From 7am to 7pm, Members can enjoy the Members' Bar, O'Duffy Library, and Level 2 Business Centre and Business Offices.

The Bar will serve tea, coffee and pastries from 7am, and serve bar meals for lunch from noon to 3pm.

 

The Health & Wellness Centre is open as usual, and accommodation bookings available from Saturday 15 January.

The Healy Room, temporarily relocated to Level 2, will unfortunately not reopen tomorrow as planned - however, this will be reviewed next week in regards to critical staff impacts.

Building begins for Tattersall’s new dining precinct

Building has begun for the Tattersall's of tomorrow with a new contemporary dining precinct, and an enhanced ‘old world’ experience in the Members’ Dining Room, set to open in April 2022.

These experiences have been created for Tattersall's current Members and Members of tomorrow, ensuring the Club's glorious heritage of more than 155 years lives on for years to come.

Construction for the contemporary dining space will begin over Christmas on Level 1.

While we build these new dining experiences over the coming months, the Healy Room has been relocated to Level 2, along with the Members’ Services Desk.

Featuring the same menu and furnishings as the original room, the Healy Room will be open for lunch and dinner as usual for the first few months of 2022.

The O'Duffy Library has also taken up new residence on the North Balcony, overlooking the Members' Bar.

The timeline for the Club's new contemporary dining precinct was introduced in the most recent edition of the  Tattler
